My Mim( Grandmother) and I made these while I was visiting for Christmas. They were made because her son, John had been turned away from chocolate chip cookies due to the amazingness of these.
They taste wonderful, so here’s the recipe and photos of certain parts for help:
1/2 c of flour
2/3 c brown sugar
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 c margarine
1 tsp vanilla
2 egg yolks
3 c mini marshmallows
Combine all of this in a large bowl except the marshmallows . Do as you would with a pie crust, go at it with a pastry cutter until it’s nice and crumbly. Then press in the bottom of a 9 by 13 pan and bake for 12-15 minutes at 350.
It should look something like this. Once it’s finished, sprinkle the marshmallows on top and pop it back in the oven for 1-2 minutes, just enough to make them puff.
Take it out and let it cool while you make the top.
2/3 c white corn syrup
1/4 c margarine
2 tsp vanilla
1 20oz pkg Peanut Butter Chips
2 cups rice crispies
2 c dry roasted peanuts (I would crush or chop them up. They like to jump around and fall off when you are cutting then squares)
Heat a sauce pan and combine the first 4 ingredients. Stir constantly!!
When it’s all combined, add the rice crispies and stir them in. When every one is all married up, spread them over the marshmallows.
We added some chocolate chips on one half to see what it would taste like. It was also pretty tasty. Spread the peanuts on top.
Once every thing is all put on, chill. Then enjoy! I would cut them into squares first because cutting them after they are chilled is a little difficult.
This was a first time recipe so any little tips are from what we decided would be better.
